HOW WE BREW V60

We divided our coffee range into three roast styles.
The roast style will be the main factor in deciding how to brew your filter coffee.

For all coffee brewing, we recommend using clean and soft water at around 120ppm.

For our light roasts, we recommend using a coffee to water ratio of 1:16 to 1:18. The brewing temperature should be a minimum of 93°C
For medium roasted coffees, we recommend a coffee to water ratio of 1:15 up to a 1:16 with brewing water temperature between 90°C and 93°C.
Dark roasted coffees should be brewed at temperatures below 90°C with coffee to water ratios of 1:15 and below.

Here is a recipe we are using at the roastery:

1.Rinse filter and pre-heat V60

2.Pour coffee into brewer

3.Pre-wet with ~2x weight of coffee

4.Swirl brewer until the slurry is even.

5.At 30s, start with the first pour till half of your desired volume.

6.At 1min 15s, gently complete the second pour till your desired volume

7.Stir gently to remove the grounds from the sides of the filter

8.Aim to finish brew by 3min 30s.
